Grilled Swordfish with Roasted Figs

Ingredients:

  • 200g swordfish fillet
  • 4 fresh figs
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • 1 sprig of fresh rosemary
  • Salt and pepper to taste
  • 1 lemon (for juice)
  • A few arugula leaves (for garnish)

Instructions:

  1. Preparing the Swordfish:
    • Preheat the grill or a skillet to medium-high heat.
    • Brush the swordfish fillets with olive oil and season with salt and pepper.
    • Grill the swordfish for 4-5 minutes on each side until fully cooked. Squeeze lemon juice over the fish as it cooks.
  2. Roasting the Figs:
    • Preheat the oven to 180°C (350°F).
    • Cut the figs in half and place them on a baking sheet.
    • Drizzle the figs with honey and add a few rosemary leaves.
    • Roast the figs for 10-12 minutes, until they are tender and caramelized.
  3. Plating:
    • Arrange the grilled swordfish on a plate.
    • Add the roasted figs beside the swordfish.
    • Garnish with a few arugula leaves and serve warm.
