Pork with ananas and rice

Ingredients :

  • 80 grams of rice
  • 200 grams of pork
  • 100 grams of tomato sauce
  • 100 grams of ananas
  • 1/2 spring onion, finely chopped
  • 1/2 tablespoon of olive oil
  • Salt and pepper

Instructions :

  1. Cook the Rice:
    • Rinse the rice in cold water until the water runs clear.
    • In a saucepan, bring 1.5 cups of water to a boil.
    • Add the rice, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
  2. Prepare the Sweet and Sour Pork:
    • Cut the pork into bite-sized pieces and season with salt and pepper.
    • In a large skillet or wok, heat the olive oil over medium-high heat.
    • Add the pork and cook until it’s browned and cooked through, about 4-5 minutes. Remove the pork from the skillet and set it aside.
  3. Make the Sweet and Sour Sauce:
    • In the same skillet, add the tomato sauce, pineapple chunks, and half of the finely chopped spring onion.
    • Cook over medium heat, stirring, until the sauce starts to simmer and thicken, about 3-4 minutes.
  4. Combine and Serve:
    • Add the cooked pork back into the skillet with the sweet and sour sauce. Stir to coat the pork with the sauce and heat through for another 2-3 minutes.
    • Taste and adjust the seasoning with more salt and pepper if needed.
    • Serve the sweet and sour pork over a bed of cooked rice.
    • Garnish with the remaining chopped spring onion.
