Rinse the rice in cold water until the water runs clear.
In a saucepan, bring 1.5 cups of water to a boil.
Add the rice, reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
Prepare the Sweet and Sour Pork:
Cut the pork into bite-sized pieces and season with salt and pepper.
In a large skillet or wok, heat the olive oil over medium-high heat.
Add the pork and cook until it’s browned and cooked through, about 4-5 minutes. Remove the pork from the skillet and set it aside.
Make the Sweet and Sour Sauce:
In the same skillet, add the tomato sauce, pineapple chunks, and half of the finely chopped spring onion.
Cook over medium heat, stirring, until the sauce starts to simmer and thicken, about 3-4 minutes.
Combine and Serve:
Add the cooked pork back into the skillet with the sweet and sour sauce. Stir to coat the pork with the sauce and heat through for another 2-3 minutes.
Taste and adjust the seasoning with more salt and pepper if needed.
Serve the sweet and sour pork over a bed of cooked rice.
